I know this may be impossible to answer totally, but if say at court, the bios were asked to do a urine drug test, what most likely are they testing for and how long do certain drugs stay in your system, that is to say, can it be deduced from the urine test how recently a person used drugs.

Any illcit substance not naturally mimicking the body's own hormones should come up (all illegal drugs that you're thinking of) in standard urinalysis. The time each drug stays in the body is different, even different depending on amount consumed and impurities in the substance.
Substance/ Urine/ Hair /Blood / Oral Fluid

It depends on what they want to test for. The most common test, however, is called an 8-panel and tests for 8 different substances (obviously). There is also a 10-panel and a 12-panel. An 8-panel tests for the following:
Cocaine (including crack)
Amphetamines
Opiates (like heroin, Vicodin, Oxycontin, etc.)
THC (marijuana and hash)
Methamphetamine
Barbiturates (like Phenobarbital)
Benzodiazepines (like Xanax, Valium, etc.)
PCP
The other panels test for these as well as some synthetic drugs like Ecstasy, methadone, propoxyphene, oxycodone, spice, Suboxone, Ketamine (special-K), etc. You can also do more extensive tests to look for certain prescription medication like Ambien, etc. The 8-panel is the most common because it tests for most illicit drugs which are the most commonly abused drugs.
The tests can be done in a lab or "in-house" with a dip stick that will give you results in just a few minutes. I would guess that the court would use an 8 or 10 panel.
How long the drugs stay in someone's system depends on the drug, the person and how much and how often the person has used. Most drugs, like opiates, cocaine, meth, etc., stay in the system for about 4-7 days but can stay longer for some people, especially if someone is a regular heavy user. Benzos can stay in the system anywhere from 3 to 28 days. The same is true for barbiturates. THC will stay from about 7 days to several weeks. I'm not sure about PCP but I would guess it's about a week too. It's not a very common drug anymore.
If someone knew that they had to pass a drug test they would be wise to not use anything for at least a week and no pot for several weeks. Anything else is pushing it.
There are a lot of myths that there are stuff you can eat or drink to get drugs to leave the blood stream earlier and there are tons of stuff you can buy on the internet for the purpose. None of it works, though. At best it can dilute the urine which may prevent a drug from showing up but if tested in a lab it will show that it's diluted and the sample is considered unusable. Some places will automatically consider that to be a positive test. Even if you don't test the sample in a lab you can often see by looking at the urine that it's diluted because it will look almost like water.
There are of course other ways to beat a urine test if one is prepared ahead of time.
They now have saliva tests that are supposed to be impossible to fake. They are only a few bucks more than the dip sticks so why they don't use those is beyond me. It would take the risk of faking out of the equation.
Meth is only 3 days or so, and the geniuses who set up the out patient program in our area test them once a week, on the same day every week. The entire group was going out after class and hanging together for a couple of days, getting high, then stopping so theyd be clean again for the next test.
