One of the things we love about living in Colorado is the 300 days of sunshine. All this sunshine means plenty of opportunity to work and play outside all year round. Jesse built six garden beds for us to plant vegetables in our back yard and this year we have had quite a bounty. Even though we planted just a few plants, we had a bunch of volunteer plants that just sprung up from last year. Now that we are in October and it's cooling down, it's time to bring in the harvest. For our final harvest, we brought in 3 huge bowls of tomatoes, 2 crates of butternut squash and several bunches of kale, zucchini, chilies and eggplant. We can't wait to have a little one and to share our love for planting a seed in the spring and watching it grow all summer long so that it can become part of a healthy meal once it's been harvested.
