French Cooking Class

I took a French cooking class!! Ohh la la! It was about building on flavors, trying things I said I would never try (escargots) and making them look beautiful! I learned some simple recipes that have so much flavor. Here was my favorite Recipe!! It's an apple tart that tastes so divine Try it!

 

Tarte Tatin 
Ingredients
Frozen puff pastry sheet (from a 17 1/4-ounce package)
1/2 stick (1/4 cup) unsalted butter, softened
1/2 cup sugar
4 or 5 Gala or golden delicious apples, peeled, halved lengthwise, and cored (don't use granny smiths as they turn mushy)
Special equipment: 10-12 inch sauté pan
 
Preparation
Preheat oven to 425°F.

Roll pastry sheet into a 101/2-inch circle on a floured work surface with a floured rolling pin. Brush off excess flour and cut out a 10-inch round with a sharp knife, using a plate as a guide. Transfer round to a baking sheet and chill.

Spread butter thickly on bottom and side of skillet and pour sugar evenly over bottom. Arrange as many apples as will fit vertically on sugar, packing them tightly in concentric circles. Apples will stick up above the rim of skillet.

Cook apples over moderately high heat, undisturbed, until juices are deep golden and bubbling, 18 to 25 minutes. (Don't worry if juices color unevenly.)

Put skillet in middle of the oven over a piece of foil to catch any drips. Bake 20 minutes (apples will settle slightly), then remove from oven and lay pastry round over apples.

Bake tart until pastry is browned, 20 to 25 minutes. Transfer skillet to a rack and cool at least 10 minutes.

Just before serving, invert a platter with the lip over skillet and, using potholders to hold skillet and plate tightly together, invert tart onto platter. Replace any apples that stick to skillet. (Don't worry if there are black spots; they won't affect the flavor of the tart.) Brush any excess caramel from skillet over apples. Serve immediately.

Bryant and I recently celebrated our birthdays, our birthdays are only 4 day apart so we have birthday week! We spent time with family ate cake, and went shopping! 

Fall Fun

So Far Bryant and I have had a fun Fall. We went to a Few fairs, watched the parades, ate funnel cakes and had a good time with family. We have Bought pumpkins to carve and are getting ready for Treak or Treaters. We love when the leaves change and the weather starts to be cooler. We are going to enter the Chili cook off next week i think we have the winning Recipe!

Small joys in life

I made another wedding cake this last week. I like to make cake everyone is always so happy to see and eat it! Bryant and I are excited for fall, as all the fairs (mmm Peaches and funnel cakes) and family events that are coming up.  I also made cupcakes this week with my sister and my nephew who is almost 3, he is such a big help with a big smile.  We played his favorite game after cupcakes its farm animals in place of hippos (hungry hungry hippos).

Paint Night

Bryant and I decided to try a paint by number painting. This is a picture of mine, (mid paint and after.) Bryant decided to paint a lighthouse.   The painting comes as a blank canvas with just the numbers printed on it. We have been painting them for the last few weeks, as most of the painting has very small spaces. However I was very surprised on how it turned out, we have it hanging on our wall! We have been getting ready for fall, trimming the yard, we have a tree in the back yard that is already starting to turn orange.  I cannot believe summer is over.

Fun in the Sun

We have very blessed to have our family close,  we have had several "Water" BBQ'S at our house this summer. All the nieces and nephews have had a blast with water balloons, slip n slides, and a pool.  The picture is one where our nephew "Crashed" he said into the pool at the bottom of the water slide. We also made home made Ice Cream to cool down from all the fun.

Cake Week

I have been Busy this week making cakes.  Cake relaxes me, I like the detail and it reminds me of all the wonderful things around us, that are beautiful.  Most of my inspiration comes from gardens and parks.  I like to look to see what colors are together what leaves they have.  The cooking aspect of the cake is exciting! Creating something not only beautiful but tasty. I love to have hidden colors or surprise polka dots in side and watch people cut it open.
