what are the "laws" and/or ceremonies of converting the baby into Judism? Our Moehl (spelling?) is not a Rabbi or Cantor. He is a pediatrition, who does circumcision on the side. Do we need a Rabbi present for the baby to be completely Jewish?

A mohel can be a doctor (we had an orthodontist/mohel for one of our sons!), but he might also be a rabbi or have another profession. The presence of a rabbi does not make the bris kosher.
You should check with your synagogue to get a list of reputable mohels. Some orthodox mohels may do a bris "for the sake of future conversion" if you have not yet converted the baby or if you are not halachachally Jewish.
The kind of bris you choose to have is a reflection of how you plan to raise your son. If you are not orthodox, you may be comfortable with a conservative mohel.
