My great grandmothers Christmas cake..
Mother Carters Fruit Cake.
2 cups of flour (white)
1 cup Margarine
1 tsp baking powder (new and heaping)
1 cup white sugar
ݽ to 1/3 cup milk (if too wet raisons will fall) (<I made it too wet this year)
4 eggs
3 cups of raisons
8 oz each of mixed peel, cherries, almonds
1 tsp Vanilla
No salt if you use butter or margarine
Cream butter and sugar and beat eggs and milk together.. and add flour mixed with baking powder.
Set some of the flour aside to mix into the raisins and fruit..
Mix it all together.. and put into an angel food pan..
Drop the pan three times (with recipe in) to drive out air..
Bake 275 for three and a half hours..
My dad would make this cake a month before Christmas and wrap it tight so the moisture would work through the cake..
I don’t do that.. I just baked it a day or so ago..
But I love this Christmas cake.. it is just white cake that binds the fruit.. you really taste the fruit..
The cookies I make are from my childhood..
Chocolate marshmallow cookies.. no baking..
1 package of coconut..
1 bag of marshmallows cut up..
1 can of sweetened condensed milk..
1 package of chocolate wafers.. hard to get just before Christmas here..
You grind the cookies up with a rolling pin in wax paper..
Then you mix in a bowl the ingredients.. and squish them into a cake pan.. and put wax paper over it.. and put in fridge..
That above is from memory..
My dressing..
Bread.. I sit and pull it into bits before stuffing the turkey..
One onion chopped up very small.. (I do not cook it and it is a good sized onion)
One or two lemons. Not too much and not too little..
Poultry seasoning.. again not too much and not too little..
Butter.. I tried margarine when hubby had heart problems but it did not taste right..
Room temperature.. so it mixes in well.. (I must remember to buy butter)
That is my dressing recipe.. very simple.. I stuff it in the turkey and make sure there is air above the dressing so the turkey cooks..
I put a bit of tin foil over the turkey but that is all.. and I put some bacon on the turkey.. and mix it into the dressing when all is cooked..
I take the foil off an hour or so before finish..
So those are my favorite Christmas recipes..
I would love to read others..
I hear my mom and dad speaking to me while I am cooking.. they are long gone so its nice to spend time with them..
Happy Christmas to all..
