Hello,
Does anyone have any ideas for healthy passover meals? I can't eat large amounts of matzah, as DH does on the holiday, and am looking for some ideas. Usually I skip the passover diet altogether, but this year I feel healthy enough to give it a try.
For breakfast I'm thinking smoothies and/or yogurt and fruit. For dinner we will make chicken, brisket, potatoes, etc. It's lunch and snacks that are missing. FYI, we allow rice, corn, and beans on passover. I am at home a few days a week and at work other days and esp. need something I can bring with me.
Any ideas?

My wife does many different kinds of baked vegetarian "pies" for lunch (corn, zucchini, sweet potatoes, etc, etc). They look like quiche, but I believe they are not the same.They are called "pashtidah" (singular), "pashtidot" (plural) in Hebrew. I believe the recipes are all over the Net.Pessach Sameach to all of you and your families!
