Our family is just waiting for the invitation to come over to Ukraine & I was curious about what people who've already gone over there to adopt packed. Did you pack medicines? Snacks? Electronics? How much clothes? I know there is a lot of traveling back and forth between places so I would guess it's best to pack light, so what did you take?

Doesn't your agency/facilitator have suggestions for you?
My info is so dated. I would think most big city you can get stuff you may need. If you have prescription medicines I would definitely get enough of those to cover my entire trip. As for as clothing mix and match so you can create multiple outfits out of very few pieces. Take good walking shoes/boots. We didn't take snacks but we loved the food. We stayed with a host family who cooked for us (do they even do host families anymore). We took towels wash clothes, (we left these behind with the host family when we left) cold water detergent, TP, pocket packs of tissues and had sanitizer. We didnot take electronics accept for a camera. We took blank note cards so we could write a nice personal Thank you and gave cash as gifts to most of the people. Giving cash saves alot of space in our luggage.

...so your clothing situation will be different, I'm sure.
We were staying in apartments, arranged by our facilitator, which had washing machines (but no dryers, so we used drying racks/clotheslines), so we were able to get away with packing fairly light clothing. Do take good walking shoes.
We had kitchens that were small but reasonably well equipped, and we had good internet access at one of the apartments and slow at another. Skype was workable at both (although only audio on the slower one).
Don't worry about taking food; you'll be able to find a lot of things to your taste; same for toiletries, over-the-counter meds, sundries (we found imodium, peroxide, and other things there when needed). Definitely take enough of any prescription meds to cover unexpected trip lengthening (ours ended up lasting 2 weeks longer than we were told).
Electronics, hell yes. Take computer, DVDs, music, ebooks, etc. You will need entertainment.
We knew we'd have a long period of visiting at the orphanage, so we took a ton of cheap toys and activity books with us (bags of multi-colored pipe cleaners were GOLD) and the kids had burned through them by our 3rd week... but you can find more of those there, too.
