We want the bio-dad of my daughter to give up all rights to her, but not have me adapt her right away (we just got married). Is is possible for him to give up any rights / custody, without me adapting her yet? My wife and I just want him out of her life 100%, which he wants too, but I can't adapt her yet. Do we have to wait, or can he give her up altogether, including child support and all? If so, what needs to be filed in So. California?

You cannot terminate parental right in California unless the child is (a) a ward of the court or (b) the subject of an adoption. This includes stepparent. So until you are ready to adopt you may have to just deal with the situation. You can have him sign away rights now if he is willing to do that, but it won't be a done deal until the adoption is finalized. Go to the link above. You will need either AD 2B or AD 2D depends on if he's military.
Print them up and read them over and figure out which ones you will need.
Follow the instructions!!!! If you can try and get him to do more than one original. I would even offer to pay the notary fees.
