I would like to set up a simple website where I can post pictures and updates for my daughter's birthmom. Any recommendations on sites that are easy to use/setup/navigate?

I would try Facebook,or a Blog, and I would also caution with a Website.
That your Daughter's Identity can be 'Google' Searched by Anyone Online!!

I don't recommend Facebook as their privacy policies are constantly changing.
You can use Picasa and PicasaWeb/Google+.
If you're looking to create a private blog, I recommend Wordpress.
