I've been searching for a list of countries that allow single-parent adoption. I'm sure such a list exists, but I can't seem to find a comprehensive one. Would someone be willing to share a list or point me in the direction of one?

Well, I do not know if an easy way. You can go to this site, and look country by country.

Off hand, I know Bulgaria, Kazakhstan, Vietnam, and Haiti are open. There are more open to singles than closed.

Also Mongolia, Ecuador, Nepal, Thailand (for school-aged children only) and I think Liberia. Like Kay said, more countries accept single women than don't. It's more difficult for single men but I know at least Ecuador does.
Guatemala is open to singles as well but there are some changes coming that could slow things down.

I know Russia accepts singles. i recently adopted twins from there. I think Ethiopia does too. Check with your agency...they can give you better info.
Very often countries that are open to singles allow it if you take older or special needs children.

Ethiopia technically accepts single parent but most agencies have a annual quota and most cannot accept single parent applications. If you want to start the process NOW I would suggest you choose a agency that still has slots available or pick a different country. Kazakhstan and Bulgaria both accept singles.
Are you specifically looking to international? If not, many agencies in the US accept single parents for their minority programs.
ARe you talking about adopting thru the US foster care system? You typically have to foster first...I believe.
Did u adopt thru the program that you mentioned?

I went the private domestic agency route, not thru the foster care system. My DD came home when she was 3 wks.
