This will be my first Pesach with a child, and I'm having trouble figuring out what to cook. C is almost 11 months, and he does eat a variety of different foods (including mildly spiced things), but I'm not sure about some of the things I often cook for Pesach (I often tend to do a lot of horseradishy things, since I like it, but I'm not sure he's up for that intensity). To add to the challenge, C is lactose intolerant, and I do keep strictly kosher during Pesach and have only one set of dishes/ pots/ etc, so we eat dairy/ pareve only. I have a vegetable kugel that I often make, so that will start me off. I also thought I might try making gefilte fish (I was able to order some gluten-free matzoh meal), but I've never tried it before. Is it really hard? Any other suggestions? I don't have the amount of time or energy for finding recipes or for cooking that I usually do.
